Le Silo – 6 Year Cheddar
Le Silo is a great example of a truly Canadian-style Cheddar. Made from Quebec milk and aged in stone silo for six years, this cheese develops a rich, creamy mouthfeel with ample flecks of tyrosine crystals.
The salty nature of this aged cheddar will contrast nicely with sweet maple syrup—try it melted in a grilled cheese sandwich with a pot of warmed maple syrup for dunking!
