Moo Brew

This is a hand crafted cow’s milk cheese that is modeled after a little known Swiss cheese called Mutchli. It is a mild creamy cheese with buttery flavours. It is rubbed with an expresso blend from Early Bird Coffee in Woodstock and then continues to age for three months

Five Brothers

This is a hand crafted washed rind cow’s milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It is available at 8 months old.  It is delicately aged on pine planks adding robust flavours to the cheese. It has creamy and rich flavours with sweeter overtones and distinctive eyes throughout the body of the cheese.

Handeck

This is a hand crafted washed rind cow’s milk cheese that is produced using the same methods as a typical Swiss mountain style cheese. It is available at 24 months old and for December we offer a four year old version. It is delicately aged on pine wood planks adding robust flavors to the cheese. It is a drier hard cheese with very rich and complex flavors and nutty overtones. All of the milk used comes from our family dairy farm. It pairs well with red wines such as Pinot Noir and also dark roasted beers.

Grand Trunk

Grand Trunk tastes excellent in sandwiches or on a cheese platter with fruits, dried meat and rustic bread. It is a great cheese for fondue or grilled cheese sandwiches. Pairs well with white or red wine. Grand Trunk is unique in its appearance and taste.

Hot Chili Havarti

A true artisan take on a Danish-inspired classic! Made from 100% single source farmstead goat’s milk, this unique flavour of Goat Cheese Havarti is made with real hot chili peppers, with just enough kick to remember it. Whether you want to spice up your omelet game or impress your friends with a spicy Havarti dip, we know this one is going to be a hit.

Asiago

This artisan cheese maker takes pride and takes exceptional care of this recipe. Made with 100% single sourced farmstead goat’s milk, the Asiago-Style Goat Cheese is rich with flavour. With a nuttier and creamier taste than the average parmesan style, this full-of-flavour goat cheese can be grated onto your favourite pasta dish or sprinkled on a salad.

Muskoka Bliss- Cranberry Swiss

Muskoka Bliss is very creamy and is made with dried cranberries from Muskoka. It tastes great on a cheese platter with fruits and nuts or as a snack. It also melts very well, making it a special treat for raclette or grilled cheese sandwiches. Pairs well with light-bodied red wine.

Smoked Chipotle

Smoked Chipotle starts out smooth with a hint of smoky flavour then its chipotle heat warms the tongue in all the best ways.  Smoked Chipotle tastes great on a cheese platter or as a snack. Its melting ability makes it the perfect cheese for tacos, grilled cheese sandwiches or spicy mac and cheese casseroles.

Smoked Chipotle pairs well with light-bodied red wine.

Game Changer White

Game Changer White is extremely creamy and is soaked in Vineland Estates Winery‘s Game Changer white wine. It tastes great on a cheese platter with fruits and nuts or as a snack. This cheese also melts very well, making it a special treat for raclette or grilled cheese sandwiches. Pairs well with red wine.
