Niagara Gold is a washed rind, semi-soft cheese. This means it is crafted in the time honoured traditions of the Trappist Monks. Every week each cheese is brushed and washed in a brine or morge, flipped and returned to its place in the aging room. In fact this entire procedure happens twice every week for the five months that Niagara Gold ages to perfection! To ensure correct aging conditions, the ripening room is kept at 91RH and 52F precisely.
This is a cheese with nutty, earthy overtones and mellow, buttery flavours. This luscious cheese is delicately mild and sweet when young and gains pungency and piquant qualities with age. The rind may be eaten or trimmed depending on your taste.
